Mango Avocado Poblano Salsa
 
Here is a great summer salsa to keep everyone happy!
 
1 large ripe mango
1 Jalapeno
1 Poblano Pepper
1 Hass Avocado
1 lime
Salt and Pepper to taste
 
Peel mango and cut into small pieces. Take the seeds out of the poblano and jalapeno peppers and cut into really small pieces. Cut the avocado in half and take the seed out and cut into bite size pieces. Cut lime and use all of the juice on the salsa. Salt and pepper to taste! Mix and eat with bean quesadillas or tortilla chips! Yummy!!

Vegan Green Smoothies!

Vegan Green Smoothies!
Some of my favorite meals are green smoothies! I love how they make me feel and how they taste!
Here is my standby recipe:
2 Cups of Dino Kale or any other type of kale
1 Cup of spinach, romaine, or wild greens
1 cup of frozen blueberries
1 small piece of ginger
1 scoop of vegan sun warrior powder
1 Tablespoon of Chia seeds
2 cups of coconut water
1/4 cup of hemp or flax milk
Mix for a couple minutes and serve! It make 2 large smoothies. One for you and one for someone else!!
These are so good for you. Sometimes you get too busy during the day to eat healthy items so if you at least start your day off with a green smoothie you will be half way there!
